Black Chickpeas
Black chickpeas are a smaller, darker variety of the classic chickpea. They get their color comes from the same powerful antioxidants that make blueberries blue! Which means they have antioxidants, among other health benefits (see below).
Like other legumes, black chickpeas work as a nitrogen-fixers, which helps the health of the soil and future crops. They grow on bushy plants with feathery leaves that produce tiny white or purple flowers that eventually become small pods, each holding one or two seeds.
Black chickpeas are are used much in Indian cooking; they’re the main ingredient in curries like kala chana masala. We love them for their slightly nutty, earthy flavor and firm texture and use them in everything from hummus, to soups, to curries.

How to Store Black Chickpeas
Store dry black chickpeas in a cool, dry place.
Once cooked, let chickpeas cool, then refrigerate in an airtight container with a bit of their cooking liquid for up to 5 days. They also freeze well, so you can use them for quick meals later in the week.
How to Soak and Cook Chickpeas
Soak dried chickpeas overnight in plenty of water as they’ll expand as they absorb moisture.
Drain, then place in a large pot and cover with fresh water, a few inches above the chickpeas.
Simmer for about 1½ hours, or until tender. Cooking time can vary based on how long they were soaked.
Drain (saving some of the cooking liquid) and they’re ready to use.
Chef’s Tip: Cook your black chickpeas the night before you plan to use them. Most of the cooking time is hands-off, and this way they’re ready to go when you need them. Just reheat or add straight into your dish the next day.
