What are Cabbage Microgreens?
Cabbage microgreens are the young shoots of the cabbage plant, harvested just 7β14 days after germination. Instead of growing into a full head, the plant is cut while still tender, when the first true leaves have appeared.
These microgreens are small in size but easy to recognize: thin white stems topped with soft, heart-shaped leaves that range from pale green to a deep purple-red, depending on the cabbage variety. The texture is crisp yet delicate, making them pleasant to eat raw.
Flavor-wise, cabbage microgreens are milder and sweeter than mature cabbage. They carry a subtle hint of earthiness with a faint peppery note, giving them enough personality to stand out in a dish without overwhelming it.
Wash & Store
Rinse gently in cold water and spin dry in a salad spinner or pat dry with paper towels.
Store in a container or bag in the fridge with a paper towel to absorb moisture.
