Kale Caesar Dip

This creamy, flavor-packed Kale Caesar Dip puts your weekly greens to work in a fresh, unexpected way. Try it with vegetables, crackers, or spread it onto sandwiches. You’ll never look at kale the same way again!
Ingredients:
1 cup greek yogurt
1/2 cup mayonnaise
1/2 cup grated parmesan or pecorino
1 Tbsp anchovy paste or minced anchovy
1 Tbsp lemon juice
1 Tbsp white vinegar
1 cup shredded Kale Mix
3 Tbsps chopped dill (with stems)
2 minced garlic cloves or 1 tsp garlic powder
Black pepper
Instructions:
Massage your chopped Kale Mix in a bowl with just a bit of oil and salt—this tenderizes the leaves.
Mix the rest of the ingredients with the Kale Mix and you're done!
You can refrigerate for 30 mins (or until you're ready to eat).
Tips and Substitutions:
Don't be afraid to use the dill stems- they have as much flavor as the leaves!
No anchovy? Omit or use fish sauce
No lemon? Use all white vinegar
No greek yogurt? Use sour cream instead.
