Kale Microgreens
What are Kale Microgreens?
Kale is a leafy green from the brassica family, related to cabbage, broccoli, and Brussels sprouts. While mature kale is known for its sturdy leaves and sometimes bitter bite, kale microgreens are harvested just days after sprouting, when the plant is only a few inches tall. At this stage, the flavor is milder, slightly nutty, and more delicate, making it approachable even for those who find full-grown kale intense. The leaves are tender with crisp stems, and because microgreens are concentrated in nutrients during this early stage of growth, they deliver even more vitamins and antioxidants per bite than their mature counterpart.
