Large White Kidney Beans

Large white kidney beans, also known as cannellini beans, are plump, creamy beans with a firm texture and mild, nut-like flavor. They grow inside pods on low, bushy plants. Like all legumes, they have a natural partnership with soil bacteria that allows them to create their own fertilizer through nitrogen fixation: a process that turns nitrogen from the air into plant food. Bean roots also absorb minerals like iron, magnesium, and potassium directly from the soil, which later show up in the beans themselves.

Wash & Store

  • Store uncooked beans in a sealed jar or airtight container in a cool, dark place for up to a year.

  • Cooked beans keep up to 5 days in the fridge or 2–3 months in the freezer.

Soaking & Cooking Kidney Beans

  • Soak: For even cooking, soak beans overnight in plenty of cold water (or use a quick soak by boiling for 2 minutes, then letting sit for 1 hour).

  • Simmer: After soaking, drain, cover with fresh water or broth, and simmer gently for 45–60 minutes until tender.

  • Seasoning: Salt at the end of cooking to keep the skins intact. Add aromatics like garlic, bay leaf, or onion to the cooking liquid for more flavor.

How to Use Kidney Beans

  • Soups: Add to vegetable soups, chili, or minestrone for creamy texture and protein.

  • Salads: Toss into any kind of salad to make it hearty.

  • Purees: Blend into dips, spreads, or bean-based sauces for added creaminess.
