What is a Shrub?
A shrub is a tangy, sweet-tart syrup made from fruit, vinegar, and sugar. It started as a preservation method in the 17th and 18th centuries, used to fend off scurvy and keep fruit fresh without refrigeration. Later, during Prohibition, shrubs made their way into speakeasies as flavorful, booze-free mixers.
Today, shrubs are becoming popular again, used by bartenders and chefs for their bold flavors. They also contain probiotics from raw vinegar, and can help aid digestion and balance blood sugar. Some people even sip them straight as a health tonic.
Simple Ways to Use Strawberry Shrub
Using a shrub is super easy. Just splash it into cocktails, mocktails, or dressings to add a tangy flavor, plus gut-friendly benefits.
1. Summer Spritz
Mix 1–2 oz strawberry shrub with 8 oz sparkling water. Add ice, a citrus wedge, or a sprig of mint. That’s it. Think of it as a farm-grown soda—but better for your gut.
2. Cocktail Upgrades
Strawberry Shrub Margarita:
Shake and pour over ice:
2 oz tequila
1–2 oz strawberry shrub
1 oz St. Germain
A squeeze of lime
Strawberry Gin Fizz:
Serve over ice and garnish with lemon balm or mint:
1 oz gin
1–2 oz strawberry shrub
5 oz soda water
3. Make a Vinaigrette
Whisk together and drizzle over greens, fruit salads, or grilled veggies.:

½ cup olive oil
2 Tbsp minced shallot
1 Tbsp salt
Cracked black pepper
