Tatsoi Tacos
Ingredients:
- Serrano peppers 
- Protein of choice (e.g., chicken, beef, tofu) 
- Cheese or substitute 
- Tortillas 
- Taco seasoning 
- Taco topper 
Instructions:
1.Prepare Serrano Peppers:
- Chop Serrano peppers finely. 
- Sauté the peppers in a skillet until tender. Set aside. 
2. Cook Protein:
- Cook your protein of choice in the same skillet used for the peppers. 
- Add taco seasoning to the protein while cooking, ensuring it's evenly coated and flavorful. 
3. Warm Tortillas:
- Heat a separate skillet or griddle over medium heat. 
- Warm the tortillas on the skillet for about 30 seconds on each side, until they are soft and pliable. Keep warm until ready to use. 
4. Assemble Tacos:
- Lay out warmed tortillas on a clean surface. 
- Evenly distribute the cooked protein onto each tortilla. 
- Sprinkle cheese (or substitute) over the protein. 
- Add a generous handful of Tatsoi microgreens on top of the cheese. 
- Spoon the sautéed Serrano peppers over the microgreens. 
5. Fold Tacos:
- Carefully fold each tortilla over the filling, creating a taco shape. 
6. Top and Serve:
- Sprinkle some taco topper over the assembled tacos for extra flavor and texture. 
- Serve the tacos immediately while warm and enjoy the flavorful combination of ingredients!
