Ingredients:
Serrano peppers
Protein of choice (e.g., chicken, beef, tofu)
Cheese or substitute
Tortillas
Taco seasoning
Taco topper
Instructions:
1.Prepare Serrano Peppers:
Chop Serrano peppers finely.
Sauté the peppers in a skillet until tender. Set aside.
2. Cook Protein:
Cook your protein of choice in the same skillet used for the peppers.
Add taco seasoning to the protein while cooking, ensuring it's evenly coated and flavorful.
3. Warm Tortillas:
Heat a separate skillet or griddle over medium heat.
Warm the tortillas on the skillet for about 30 seconds on each side, until they are soft and pliable. Keep warm until ready to use.
4. Assemble Tacos:
Lay out warmed tortillas on a clean surface.
Evenly distribute the cooked protein onto each tortilla.
Sprinkle cheese (or substitute) over the protein.
Add a generous handful of Tatsoi microgreens on top of the cheese.
Spoon the sautéed Serrano peppers over the microgreens.
5. Fold Tacos:
Carefully fold each tortilla over the filling, creating a taco shape.
6. Top and Serve:
Sprinkle some taco topper over the assembled tacos for extra flavor and texture.
