Tatsoi Tacos

Ingredients:

  • Tatsoi microgreens

  • Serrano peppers

  • Protein of choice (e.g., chicken, beef, tofu)

  • Cheese or substitute

  • Tortillas

  • Taco seasoning

  • Taco topper

Instructions:

1.Prepare Serrano Peppers:

  • Chop Serrano peppers finely.

  • Sauté the peppers in a skillet until tender. Set aside.

2. Cook Protein:

  • Cook your protein of choice in the same skillet used for the peppers.

  • Add taco seasoning to the protein while cooking, ensuring it's evenly coated and flavorful.

3. Warm Tortillas:

  • Heat a separate skillet or griddle over medium heat.

  • Warm the tortillas on the skillet for about 30 seconds on each side, until they are soft and pliable. Keep warm until ready to use.

4. Assemble Tacos:

  • Lay out warmed tortillas on a clean surface.

  • Evenly distribute the cooked protein onto each tortilla.

  • Sprinkle cheese (or substitute) over the protein.

  • Add a generous handful of Tatsoi microgreens on top of the cheese.

  • Spoon the sautéed Serrano peppers over the microgreens.

5. Fold Tacos:

  • Carefully fold each tortilla over the filling, creating a taco shape.

6. Top and Serve:

  • Sprinkle some taco topper over the assembled tacos for extra flavor and texture.

  • Serve the tacos immediately while warm and enjoy the flavorful combination of ingredients!
