Thyme Vinaigrette

Bright, fresh, and full of flavor, this thyme vinaigrette uses the entire lemon (peel and all) for a bold, citrusy dressing. It’s great on a salad or grain bowl, drizzled over vegetables, or mixed with Greek yogurt for a spread or dip.

Note: When choosing lemons or limes, go for those with smoother skin; they’re generally juicier and have thinner rinds than those with rougher skin.

Ingredients:

  • 1 small lemon (organic, otherwise scrubbed well)

  • 3/4 cup olive oil

  • 1 garlic clove

  • 1.5 Tbsp maple syrup or honey

  • 1 tsp Dijon mustard

  • 1.5 Tbsp thyme leaves

  • 1.5 tsp salt

  • black pepper to taste

Instructions:

  1. Rinse lemon well, then cut off both ends.

  2. Cut into slices or smaller pieces, removing any seeds.

  3. Add all ingredients to a blender.

  4. Blend until smooth.

  5. If it seems too thick, add a splashes of water until the desired consistency is reached.

  6. Taste and add more salt, pepper, or maple syrup as needed.
