Thyme Vinaigrette
Bright, fresh, and full of flavor, this thyme vinaigrette uses the entire lemon (peel and all) for a bold, citrusy dressing. It’s great on a salad or grain bowl, drizzled over vegetables, or mixed with Greek yogurt for a spread or dip.
Note: When choosing lemons or limes, go for those with smoother skin; they’re generally juicier and have thinner rinds than those with rougher skin.
Ingredients:
1 small lemon (organic, otherwise scrubbed well)
3/4 cup olive oil
1 garlic clove
1.5 Tbsp maple syrup or honey
1 tsp Dijon mustard
1.5 Tbsp thyme leaves
1.5 tsp salt
black pepper to taste
Instructions:
Rinse lemon well, then cut off both ends.
Cut into slices or smaller pieces, removing any seeds.
Add all ingredients to a blender.
Blend until smooth.
If it seems too thick, add a splashes of water until the desired consistency is reached.
Taste and add more salt, pepper, or maple syrup as needed.
