Loaded Split Pea Mash
Green split peas are a legume with a rich, earthy flavor and naturally creamy texture when cooked. Similar to lentils but heartier, they break down beautifully, making them perfect for comforting, mashed-style dishes like this one.
This recipe takes green split peas in a cozy, savory direction (think loaded mashed potatoes, but deeper in flavor and just as satisfying).
Ingredients
12 ounces split peas
4 cups water
3 bay leaves
10–15 sage leaves
1 bunch scallions, thinly sliced, a few reserved for garnish
8 slices bacon
1 cup plus 1/4 cup shredded cheddar
1/2 cup sour cream or Greek yogurt
3 Tbsp butter
2 tsp salt
Black pepper
Instructions
Cook the Split Peas
Place split peas in a small pot with water, bay leaf, and salt.
Simmer for about 30 minutes, or until the peas are very soft.
Stir occasionally and add more water as needed.
You need enough water for the peas to fully cook, but by the end they should absorb all of it.
If there’s extra water once they’re cooked, simply drain it off, then return the peas to the pot and cook off any remaining liquid.
Remove bay leaves.
Prepare the Bacon and Aromatics
Cook 8 slices of bacon in a pan over medium heat until crispy.
Remove bacon and half the grease from the pan.
Swirl in butter.
Cook scallions and sage for 4–5 minutes.
Set aside.
Chop bacon into small pieces.
Finish the Dish
Once the peas are cooked, stir in 1 cup cheese.
Add green onions and sage with the butter.
Season with black pepper and more salt as needed.
Top with crumbled bacon.
Finish with a dollop of sour cream.
Garnish with extra scallion and shredded cheese
