What is Bok Choy?

Bok choy, also known as Chinese cabbage, is a leafy green vegetable that belongs to the mustard family along with other cruciferous vegetables like broccoli, cabbage, and kale. It has a mild, slightly peppery flavor with a little sweetness. 

At our organic farm in Arlinton, VA, we harvest bok choy about a month and a half after it is planted. Both the leaves and the stalks of bok choy are edible, offering different textures and flavors in one vegetable. Its dark green, spoon-shaped leaves are tender, yet crisp, while its white stalks are crunchy and juicy. 

Bok choy has been a staple in Asian cuisine due to its versatility and nutritional benefits. Today, it is enjoyed all over the world in various dishes. Bok choy is recognized as an exceptionally healthy vegetable - it is low in calories yet high in essential vitamins, minerals, and antioxidants. How to Prepare Bok Choy 

Bok choy should keep its crunch for the week when stored in the crisper drawer; just wrap it in a damp paper towel or put it in a plastic bag. When preparing it, you’ll find that it is extremely easy to incorporate into many meals.

You can shred the stalks and the leaves and eat it raw in slaws, or cook it in a variety of ways, including steaming, grilling, boiling, and sautéing. And it pairs well with all types of vegetables and meats. Bok choy is also a perfect vegetable for vegan meals. Here are a few simple ways to prepare bok choy:

  • You can grill it: Halve bok choy heads and grill them until charred.

  • You can stir-fry it: Quickly stir-fry bok choy with garlic, scallions, or ginger (maybe add some soy sauce) for a side dish, or add more vegetables or meat to make it a full meal.

  • You can steam it: Steam bok choy until it's just tender and drizzle it with sesame oil for a light and healthy side.

  • You can chop or shred it: Make a unique salad or slaw by chopping or shredding raw bok choy. It will add a crunchy texture.
