Microgreen Vinaigrette
This bright, punchy vinaigrette is an easy way to use microgreens beyond a topper or garnish. Blended into this simple dressing, they add freshness and nutrients. It’s excellent on salads, grain bowls, roasted vegetables, or even as a drizzle over eggs and proteins.
Ingredients
3 Tbsp olive oil
3 Tbsp apple cider vinegar
3 Tbsp Dijon mustard
1.5 Tbsp honey
1 garlic clove, minced
1 tsp salt
1/2 cup microgreens
Instructions
Add all ingredients to a blender and blend until smooth.
ORFinely chop the microgreens, then whisk together with the rest of the ingredients until fully combined.
Store in a sealed jar in the refrigerator and use within 3–5 days. Shake well before using.
