Pumpkin Seed and Sage Gremolata
Gremolata is one of those simple recipes that instantly makes food taste better. Traditionally made with just three ingredients—lemon, parsley, and garlic—it’s a classic Italian condiment meant to “wake up” roasted meats, soups, or vegetables with a burst of freshness.
This version adds a twist, adding in earthy sage and nutty pumpkin seeds for extra crunch and depth. It’s bright and aromatic aromatic. Spoon it over roasted squash, stir it into pasta with some butter, or sprinkle it on top of creamy soups.
Ingredients
15 sage leaves
1/3 cup parsley, finely chopped
½ cup pumpkin seeds, chopped
2 garlic cloves, grated
1 lemon, zested and juiced
¼ cup + 3 Tbsp olive oil
1 tsp salt
Pepper to taste
Instructions
Heat 3 tablespoons of olive oil in a small pan over medium heat. Once hot, add the sage leaves and fry for 2 minutes, stirring or flipping until they’re evenly crisp.
Transfer the sage leaves to a plate lined with a paper towel to drain, then pour the warm oil over the minced garlic.
Once cool transfer sage to a cutting board and finely chop, or simply crumble them with your fingers over a bowl.
Mix all ingredients together in a bowl, using the garlic-sage oil as part of your 1/4 cup. Mix well.
How to Use Gremolata
Toss with roasted vegetables or potatoes
Stir into pasta with butter or olive oil
Spoon over grilled meats or fish
Sprinkle over creamy soups (like butternut squash or tomato)
