Roasted Cabbage
Roast cabbage to make a crispy, caramelized base that works in so many ways. You can enjoy it on its own, or toss it into salads or grain bowls. It’s a simple way to add texture and flavor to several dishes.
Ingredients
1 head of cabbage
3–4 tablespoons olive oil
Pinches of salt
Instructions
Preheat your oven to 425°F (220°C).
Cut the cabbage in half lengthwise, remove the core, then split each half in half lengthwise again.
Shred the cabbage into ½-inch pieces.
Toss the shredded cabbage with olive oil and a couple pinches of salt.
Spread the cabbage evenly on a baking sheet.
Roast for 25–30 minutes, tossing once or twice during cooking, until the edges are golden and crispy.
