Roasted Cabbage

Roast cabbage to make a crispy, caramelized base that works in so many ways. You can enjoy it on its own, or toss it into salads or grain bowls. It’s a simple way to add texture and flavor to several dishes.

Ingredients

  • 1 head of cabbage

  • 3–4 tablespoons olive oil

  • Pinches of salt

Instructions

  1. Preheat your oven to 425°F (220°C).

  2. Cut the cabbage in half lengthwise, remove the core, then split each half in half lengthwise again.

  3. Shred the cabbage into ½-inch pieces.

  4. Toss the shredded cabbage with olive oil and a couple pinches of salt.

  5. Spread the cabbage evenly on a baking sheet.

  6. Roast for 25–30 minutes, tossing once or twice during cooking, until the edges are golden and crispy.
