Roasted Marinated Beets
These roasted marinated beets are earthy, vibrant, and full of flavor. Roasting brings out their natural sweetness, while the orange-herb vinaigrette makes them bright and refreshing—perfect as a side dish or salad topper.
Ingredients:
1.5 lbs beets
Olive oil
Salt
Vinaigrette:
1/4 cup olive oil
1 tsp orange zest
3 Tbsp orange juice
3 Tbsp apple cider vinegar
2 Tbsp honey
1 Tbsp Dijon mustard
2 tsp chopped oregano
2 tsp chopped thyme
1 tsp salt
1/2 tsp pepper
Directions:
Preheat oven to 400°F.
Peel the beets, trim the ends, then cut in half and slice into 1/2-inch wedges.
Drizzle the beets generously with olive oil, season with salt and pepper, and spread evenly on a baking sheet.
Roast for about 30 minutes, or until a fork easily pierces them.
While the beets roast, whisk together all vinaigrette ingredients in a bowl.
Once the beets have cooled slightly, toss them with about half of the vinaigrette, adding more as needed.
For best flavor, let the beets marinate for at least 2 hours before serving, though they can be enjoyed right away.
