Roasted Marinated Beets

These roasted marinated beets are earthy, vibrant, and full of flavor. Roasting brings out their natural sweetness, while the orange-herb vinaigrette makes them bright and refreshing—perfect as a side dish or salad topper.

Ingredients:

  • 1.5 lbs beets

  • Olive oil

  • Salt

Vinaigrette:

  • 1/4 cup olive oil

  • 1 tsp orange zest

  • 3 Tbsp orange juice

  • 3 Tbsp apple cider vinegar

  • 2 Tbsp honey

  • 1 Tbsp Dijon mustard

  • 2 tsp chopped oregano

  • 2 tsp chopped thyme

  • 1 tsp salt

  • 1/2 tsp pepper

Directions:

  1. Preheat oven to 400°F.

  2. Peel the beets, trim the ends, then cut in half and slice into 1/2-inch wedges.

  3. Drizzle the beets generously with olive oil, season with salt and pepper, and spread evenly on a baking sheet.

  4. Roast for about 30 minutes, or until a fork easily pierces them.

  5. While the beets roast, whisk together all vinaigrette ingredients in a bowl.

  6. Once the beets have cooled slightly, toss them with about half of the vinaigrette, adding more as needed.

  7. For best flavor, let the beets marinate for at least 2 hours before serving, though they can be enjoyed right away.
