Smashed Marinated Radish

Ingredients:

  • 10 small–medium radishes

  • 2 garlic cloves, grated

  • 2 Tbsp chives or scallions, thinly sliced

  • 2 Tbsp dill, chopped

  • 2 Tbsp olive oil

  • 2 Tbsp apple cider vinegar

  • 1 tsp sugar

  • 1.5 tsp salt

Directions:

  1. In a medium bowl, combine the garlic, chives, dill, olive oil, apple cider vinegar, sugar, and salt. Stir well to make the marinade.

  2. Gently smash each radish with a kitchen mallet or the bottom of a glass until slightly cracked open but still intact.

  3. Add the smashed radishes to the bowl and mix well with the marinade, or place everything in a container with a lid and shake to combine.

  4. Let the radishes marinate for at least 30 minutes before serving.
