Smashed Marinated Radish
Ingredients:
10 small–medium radishes
2 garlic cloves, grated
2 Tbsp chives or scallions, thinly sliced
2 Tbsp dill, chopped
2 Tbsp olive oil
2 Tbsp apple cider vinegar
1 tsp sugar
1.5 tsp salt
Directions:
In a medium bowl, combine the garlic, chives, dill, olive oil, apple cider vinegar, sugar, and salt. Stir well to make the marinade.
Gently smash each radish with a kitchen mallet or the bottom of a glass until slightly cracked open but still intact.
Add the smashed radishes to the bowl and mix well with the marinade, or place everything in a container with a lid and shake to combine.
Let the radishes marinate for at least 30 minutes before serving.
