Quick Pickled Onions

Ingredients:

  • 1 large onion (any color), thinly sliced

  • 1/2 cup water

  • 1/2 cup white vinegar

  • 2 Tbsp honey

  • 2 tsp salt

Directions:

  1. In a small saucepan, bring the water, vinegar, honey, and salt to a simmer until the honey dissolves.

  2. Place the sliced onions in a heat-safe jar, such as a mason jar.

  3. Pour the hot pickling liquid over the onions, pressing them down as needed so they’re fully submerged.

  4. Let the onions cool at room temperature for at least 30 minutes before serving.

  5. Store leftovers in the refrigerator for up to two weeks—the flavor deepens the longer they sit.
