This recipe depends on what you have in your in your fridge, so experiment with different sauces, seasonings, and herbs.
Ingredients
Mini Corn Tortillas
Cucumbers
Salad Blend
Microgreens (sunflower microgreens are an Area 2 farmer favorite)
Herb of choice (lemon thyme is an Area 2 farmer favorite)
Cheese of Choice
Olive Oil
Protein of choice
Directions
Start by portioning out the greens you plan to use, then wash
Cut your cucumbers into quarters
Turn on the grill and add your protein
Add olive oil to your pan and wait for it to heat up
Place your tortillas onto the pan then flip when crisp
Once it is crisp add your cheese and protein
Throw all of your greens on top and enjoy
