This is the First Week of the Winter Season 2023

Red and Green Lettuce

It’s beginning to look a lot like a holiday farm grown feast! Add flavor, vitamins, and hydration to your holiday table with a red and green lettuce blend. As a salad, with this week’s red and green microgreens, you can create the center of a beautiful farm table. Add cheeses, berries, and candied nuts or seeds for extra holiday flavor. Use these greens as a bed for steak or fish. Toss them briefly in a skillet with microgreens, olive oil, and Italian spices to dress up an Italian meal. Our locally grown foods contain more taste and sniffle-busting vitamins — perfect for the holiday season!

Pea Shoots

Freshly harvested pea shoots are a sweet holiday treat, grown at your neighborhood farm and delivered to you with a bright crunch and sweet flavor. Serve with holiday meats, in dressings and stuffings, or mix into mashed potatoes. For holiday prep days, blend into smoothies or sprinkle them into an egg-based breakfast dish for extra vitamins. We love delicate pea shoots in tomato soup — it tastes great and boasts Yuletide hues. 

Kale and Amaranth Microgreens

Staying up to wait for Santa? These red and green microgreens have the nutrients and big taste you need! A gift in themselves, try these microgreens on warm sandwiches, vegetable wraps, in salads, or as a topping for avocado or meat. They add depth to a salad, and make a roast, winter stew, or Italian food shine. Your gifts — but not your food! — will be coming from the North Pole. We’ve moved the farm to the neighborhood and we deliver — no reindeer required!

Frosted Peppermint

Have a chill-y holiday drink with frosted peppermint, or include it in a warm cup of cheer! It’s the perfect time for this frosty treat. Bring the crisp straight to your door with the woodsy pick-me-up of frosted peppermint. Add to spreads and fruity jams or dress up buttered toast. Serve with fruits or add to gelato and chocolate-based desserts. Cooling peppermint can help a headache or a seasonal cold. 

Rosemary

A classic winter herb, rosemary has been incorporated into Yuletide celebrations and Solstice observances for centuries. These herbs, grown locally at our Arlington, VA farm, are fragrant, delicious, and meant for holiday meat dishes, dressings and stuffings, butter infusions, tomato-based sauces and dips, and tastes delightful in pesto.  A kitchen staple and internal cleanser rosemary helps with seasonal colds and is a natural antimicrobial. Mix in with soft cheeses or dips for an earthy flavor on your charcuterie board. 

Petite Cauliflower

A holiday harvest wouldn’t be complete without snow-colored cauliflower. This hearty winter delight is fibrous and nutritious with a huge dose of vitamin C. Blend into sauces or add to salads, we also love to roast and curry this farm favorite. Add with pea shoots to egg-based dishes, or stir fry with olive oil and melt in some cheese. If adding to salads, tacos, or paninis, try with avocado and this week’s red and green micros.
