Un-beet-able Greens Mix

The Almanac calls for clouds this week, so we’ve included some sunshine in your harvest. Crunchy, sweet, and just the right amount of crisp, our greens mix delivers bold flavor for your wintry week. These vitamin A and C rich greens contain healthy phytonutrients, folate, and fiber. Use as an entree or side salad, or dress up a meat or hearty vegetable dish with a bed of these greens.

Pea Shoots

Pea shoots are crispy young microgreens that have a sweet, bold flavor and create beautiful, delicious salads. A favorite of everyone on the farm, these micros have fiber, protein, fortifying folate, and vitamins K and A. We recommend eating them raw anywhere you’d usually use spinach or swiss chard. Perfect on their own as a salad or eaten as a popcorn-like snack.

Radish Microgreens

Radish microgreens are a tiny superfood that’s huge in flavor and nutrients. With the tangy taste profile of radish, each bite has vitamins A, B5, C, K, and E, plus folate, zinc, magnesium, calcium, and iron. Lots of warm flavor makes these heaven for sandwiches or in mild dips. We add them to spinach salads and use them to garnish salmon with a citrus zest. For a twist, add them into a side of buttery potatoes. 

Oregano

Natural antibiotics, oregano is more potent and hardier than its more delicate cousin, marjoram. High in vitamin A, this herb also contain vitamins C, and K. Oregano is often used in Italian and Mediterranean cuisines.

Marjoram

Natural antibiotics, marjoram is the sweeter, more delicate cousin of oregano, but these earthy, fragrant herbs are also powerful medicines. High in vitamin A, this herb also contain vitamins C, and K. Marjoram is underrated as an addition to tomato-based dishes or any broth-based soup. Add them to savory sauces, in marinades and glazes, or to add flavor to eggs.

Lavender

Lavender is the earth’s herbal love letter, delivering phytochemicals that can enhance the rest and relaxation you deserve. Add our lavender to a steam bath, or steep in water to release the classic aroma your family will love. Rich and hearty meals will benefit from this superherb, too. Citrus and dairy complement lavender, so think pasta sauces or lavender lemonade. Muddle with gin and icy cold tonic, or to top tart raspberries and dark chocolate for dessert.
