Cabbage Patch
Oakleaf + Cabbage Leaf
Cabbage leaf is airy, and fluttery oakleaf lives up to its nutty name. Potassium and vitamin C mean these salad greens are a winter tonic, and they’re healthy whether raw or sautéed.
Farmer’s recommendation: Thin slivers of Honeycrisp or cider-making apples with julienned carrots and a drizzle of warm butter can formalize a meat dish. Vinegar-based tangy dressings mean you might taste a hint of kimchi. For a warm dish, sauté with salt, butter, and olive or sunflower oil. Add a touch of vinegar if you want to bring forth the full flavor profile. At any temperature, this mix pairs well with hard cow cheeses, such as parmesan and romano.
Rainbow Radish
These microgreens are huge in flavor and nutrients. Rainbow radish micros are a superfood, with the tangy taste profile of radish. Each bite has vitamins A, B5, B6, C, and E, plus potassium, zinc, magnesium, calcium, and iron.
Farmer’s recommendation: We add them to sandwiches, on top of any salad, or as a garnish for flavorful meat. For a twist, add them into a side of buttery potatoes.
Buckwheat Shoots
Don’t let the name fool you — buckwheat shoots aren’t wheat at all. These alkalizing herbs are packed with fiber, amino acids, and nutrients like iron, calcium, magnesium, zinc, potassium, manganese, and vitamins A, B, and C. These health-fortifying microgreens are also big on flavor, and can have hints of earth, nut, and a touch of lemon.
Farmer’s recommendation: Rinse well and pat dry to add this versatile superfood to any Area 2 Farms salad mix. Use a bold addition to lettuce wraps, to dress up an olive spread, or as a garnish to light pastas and tomato-based soups. For sandwich fans, let them bolster your next BLT.
Mirepoix
Celery, Onion, Carrots
Mirepoix (Pronounced Meer-Pwah) is a traditional French recipe named after the Duke of Mirepoix. It is based on ingredients that are readily available most of the year round. Most recipes you will find for Mirepoix include celery, carrot, and onion. The key to this culinary base is that the vegetables are always diced into small cubes and slowly cooked in healthy fat over low to medium heat.
Lavender
The sweet smell of lavender is commonly used in aromatherapy. It is known to improve mood disorders, anxiety, depression, and fatigue. However, lavender is also used in culinary recipes.
