Cabbage Patch: Oakleaf + Cabbage Leaf

Airy cabbage leaf and its apt-named oakleaf team up for a bright mix. Major doses of vitamins C and K make these greens a winter tonic, including vitamin B6, calcium, folate, and manganese. This blend is healthy and delicious raw or blanched. 
Farmer’s recommendation: Add cold cabbage patch to apple and julienned carrots with a drizzle of warm butter to upgrade an entree, or make a salad topped with vinegar-based dressings for a classic taste. For a warm option, sauté with salt, butter, and olive or sunflower oil. Add a touch of vinegar to unlock the full flavor profile. At any temperature, this mix pairs well with hard cheeses, such as parmesan and romano.

Pea Shoots

Pea shoots are crisp microgreens with a sweet, bold flavor that create beautiful salads. A favorite of everyone on the farm, these micros have fiber, protein, fortifying folate, and vitamins K and A.

Farmer’s recommendation: These are best in the raw! Pea shoots work well in place of raw spinach or swiss chard. Perfect on their own, tasty additions include a slight sprinkle of sea salt or a balsamic glaze. Try them in a sandwich for a delightful crunch. 


Cabbage Microgreens

Inflammation reducing cabbage micros are more nutritious than their mature cabbage counterparts. Filled with vitamin B6, K, A, calcium, iron, magnesium, iodine, and riboflavin, these colorful micros have half your daily requirement of vitamin C. These are some of the healthiest microgreens you can have!

Farmer’s recommendation: These make a tasty salad for the whole family. Citrus zest, olive oil, and a hint of salt or pepper bring out the boldness in these delicate micros. For omnivores, add atop a hearty meat with a drizzle of horseradish. These microgreens complement cream-based cheeses and salted almonds. 

Marjoram

Natural antibiotics and marjoram are the sweeter, more delicate cousin of oregano, but these earthy herbs are powerful medicines. Vitamins A, C, and K come with a forward flavor. It is often used in Italian and Mediterranean cuisines - marjoram is underrated as a power herb. Try it with salad or add it to a mixed grill.

Farmer’s recommendation: Marjoram can be utilized in higher quantities than oregano without being overly dominant as a flavor profile. Tomato and broth-based soups will shine when marjoram is added to the mix. Add marjoram to savory sauces, marinades and glazes for meat or vegetables, and to add flavor to egg and rice-based dishes.
