Fresh Thyme and Oregano Citrus Vinaigrette
Made with freshly harvest thyme, oregano, and local Virginia honey to balance out the tangy citrus flavors, this dressing is easy to make and will transform your meals.
Ingredients
1/2 teaspoon fresh thyme leaves
1/2 teaspoon fresh oregano leaves
1/3 cup freshly squeezed lemon juice
1/3 cup freshly squeezed grapefruit juice
1/3 cup freshly squeezed orange juice
1 tablespoon finely diced sweet red onion
2 teaspoons honey
2 teaspoons Dijon mustard
Pinch of salt
Pinch of black pepper
1/2 cup extra virgin olive oil or 1/4 cup of each extra virgin olive oil and canola oil
Directions
In a small sauce pan, over medium high heat, combine all three citrus juices and cook to reduce to about 1/3 cup.
Remove from heat and add the onion and honey.
Allow the mixture to cool.
Pour into a small mixing bowl and stir in the mustard, thyme, and oregano.
Season with salt and pepper to taste.
Whisk in the oil to blend.
Tip: You can store it in the refrigerator in a glass jar for up to one week.
