What is a Leek?
A leek is a member of the allium family, which includes onions, garlic, shallots and chives. It has a mild, sweet and earthy flavor, which is similar, but milder than an onion; unlike onions, cutting leeks won't make you cry. Leeks have tightly packed layers of leaf sheaths and a long white stem that extends into dark green leaves.
Leeks thrive in cool temperatures and prefer well-drained soil that is rich in organic matter. They grow slowly over several months and are typically harvested when they reach a size of one to two inches in diameter.
At our organic farm in Arlington, VA, we grow and deliver young leeks. While mature leeks have flat leaves and strong, fibrous layers (you have to cook them to reduce their pungent flavor and tough texture). Area 2 Farms’ leeks are more delicate in both flavor and texture, which means they can be cooked or eaten raw.
How to Prepare Leeks
In general, leeks and onions are interchangeable in the kitchen. While their flavor is more delicate and sweeter than onions, leeks similarly add depth of flavor in a variety of dishes. They work well in soups, stews, stir-fries and quiches. Here are some ways to prepare leeks:
Braised leeks: Braised leeks in broth to make a side dish.
Roasted leeks: Here is an easy-to-follow recipe to make a simple, yet flavorful side dish.
Potato leek soup: Sauté leeks, onions and garlic in olive oil. Then add potatoes and broth or stock. Bring it all to a boil and let simmer.
Leek Health Benefits
Leeks have a similar nutritional profile to that of onions. They are an excellent source of vitamins A, C and folate; they are high in vitamin K, a nutrient usually associated with dark, leafy greens. They also contain minerals like manganese, iron and potassium. Leeks can help you:
Get much-needed pre-biotics: Leeks are prebiotic foods, meaning they feed the probiotics in your gut. A healthy gut supports overall health in many ways, including more efficient absorption of vital nutrients.

The leek is one of the national emblems of Wales. Legend has it that Welsh soldiers wore leeks on their helmets during a battle against the Saxons in the 7th century to distinguish themselves from their enemies.
