Roasted Leeks

Ingredients:

  1. 4 leeks, trimmed and cleaned

  2. 2 tablespoons olive oil (or Area 2 Farms’ herb oil)

  3. Fresh herbs like rosemary, parsley, or dill, chopped

  4. Salt (or Area 2 Farms’ chili salt) and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Trim the roots and dark green tops from the leeks, leaving the white and light green parts. Cut each leek in half lengthwise.

3. Rinse the leeks under cold running water and pat them dry.

4. Brush the leeks with oil, making sure to coat them evenly. You can also drizzle the oil over the leeks and rub it in with your hands.

5. Carefully transfer the oiled leeks to the preheated baking sheet or roasting pan.

6. Sprinkle salt and pepper over the leeks, and if desired, add chopped fresh herbs for extra flavor.

7. Roast the leeks on a baking sheet for about 20 minutes or until they are tender and lightly browned. You may want to turn them halfway through the cooking time for even browning.

8. Once roasted, remove the leeks from the oven and let them cool slightly before serving.
