What are Pea Shoots?

Pea shoots are the tender leaves and stems of pea plants that are harvested when they are still very young. We harvest pea shoots at our organic farm in Arlington, VA just eight days after they are planted. In general, pea shoots are harvested when the plants are about two to six inches tall—they look like a long-stemmed clover with broad, round leaves. Although tiny, these shoots have up to 40 times the nutrients of mature plants and three to five times more vitamins!

Shoots and microgreens are very similar, but both are often confused with sprouts, which are quite different. While shoots and microgreens grow in soil and harvested when the first leaves emerge, sprouts germinate in water, and are harvested after just a few days when the root tip begins to grow. With sprouts, the entire seed and the root are consumed; while with shoots and microgreens, only the stem and leaves are consumed. 

Pea shoots are quite delicate with a mild, sweet flavor reminiscent of fresh peas. They are part of the legume family along with beans and lentils, but pea shoots are eaten and prepared like leafy greens such as spinach and kale.

How to Prepare Pea Shoots

Before using pea shoots, rinse them in cold water to prevent wilting leaves. Dry them gently on a paper towel or with a salad spinner and refrigerate. 

Pea shoots are visually appealing with their vibrant green color. They bring a sweet, subtly grassy flavor and crisp texture to meals. They are easy to use and are often eaten raw, bringing an earthy, highly nutritious component to a dish.

Here are some other ways to prepare pea shoots:

Pea shoots Au Gratin: Coarsely chop pea shoots, then sauté them in butter—add salt and pepper. Once tender, add two cups of parmesan cheese and stir to combine.

Sautéed pea shoots: Use olive oil, salt, pepper and any herbs and spices of your choice and lightly sauté.
