What is Popcorn?

Popcorn comes from a specific type of maize (Zea mays everta) that has a hard outer shell and a starchy interior. Unlike regular corn, popcorn kernels have just the right moisture content inside to create that signature pop when heated. These kernels are grown in fields just like other types of corn but are left to mature on the stalk until they fully dry. Once harvested, they’re carefully dried and cured to ensure the perfect pop when exposed to heat.

Popcorn is a whole grain–each kernel contains all three parts of the grain—the bran, germ, and endosperm—making it a naturally high-fiber, nutrient-dense snack. Since it’s minimally processed (especially when air-popped or cooked on the stovetop), popcorn retains its whole grain benefits, including fiber for digestion and essential vitamins and minerals. The taste of freshly popped kernels is light, slightly nutty, and naturally buttery, making it the perfect blank canvas for both sweet and savory flavors.

Popcorn has a rich history—Indigenous peoples in the Americas were eating it long before European settlers arrived, with evidence of popped kernels dating back thousands of years. Today, it remains one of the most popular snacks–in the U.S., around 14 billion quarts of popcorn are consumed each year! 

How to Prepare Popcorn on the Stovetop

  1. Heat 2-3 tablespoons of oil (like coconut, avocado, or olive oil) in a large pot over medium/high heat.

  2. Add a few kernels to the pot and cover with a lid. When they pop, the oil is ready.

  3. Pour in ½ cup of popcorn kernels, lower the heat a touch, cover, and shake the pot occasionally to prevent burning.

  4. Once popping slows to about 2 seconds between pops, remove from heat and let sit for a minute.

  5. Transfer to a bowl and toss with melted butter and fresh herbs like rosemary, thyme, or dill for a gourmet twist.
