What are Onions?

Onions belong to the Allium family, the same family as garlic, leeks, and shallots. They grow as underground bulbs, storing nutrients while sending up long, green leaves. These bulbs vary in size, color, and flavor, ranging from pungent yellow onions to milder white and sweet varieties. 

Onions develop their signature bite thanks to sulfur compounds, which also contribute to their rich aroma and health benefits. Onion flavors range from sharp and spicy when raw to mellow and sweet when cooked. Yellow onions bring a balanced, all-purpose taste, while red onions add a bold, slightly peppery crunch to salads. Sweet onions, like Vidalias, have a milder, almost sugary flavor, making them perfect for fresh salsas or roasting.

At our organic farm in Arlington, VA, we grow spring onions, also known as scallions, green onions, or salad onions, which we harvest early before their bulbs fully develop. They have a milder, more delicate flavor compared to their fully grown counterparts. 

How to Prepare Onions

Spring onions are fresh, mild, and versatile, making them a great addition to many dishes. Here are some ways to use them:

  • Raw in Salads – Slice thinly for a mild, oniony crunch.

  • Garnish for Soups & Noodles – Sprinkle chopped green tops over ramen, pho, or miso soup.

  • Egg Dishes – Mix into scrambled eggs, omelets, or frittatas.

  • Stir-Fries – Toss in at the end for a fresh, slightly sweet bite.

  • Grilled or Roasted – Cook whole for a smoky, caramelized flavor.

  • Salsas & Dips – Add to guacamole, fresh salsas, or yogurt-based dips.

  • Spring Onion Pancakes – Mix into batter for a savory treat.

  • Pickled – Quick-pickle in vinegar for a tangy topping on tacos or salads.
