Superfood Blend Salad with Cranberry Shrub Vinaigrette

Thanksgiving dinner usually means a mix of rich, heavy dishes like creamy casseroles, buttery potatoes, and gravy on everything. That’s why it’s great to add a fresh, simple salad to the table.

Ingredients

For the Salad:

  • Area 2 Farms’ Superfood Blend

  • 1/2 cup shaved Pecorino or Ricotta Salata

  • 1/4 cup thinly sliced red onion

  • 1/2 cup walnuts or pinenuts, roasted and chopped

  • Optional: 1/4 cup chopped dill

For the Cranberry Shrub Vinaigrette:

  • 1/4 cup cranberry shrub

  • 2 Tbsp orange juice

  • 1 tsp Dijon mustard

  • 1/2 cup olive oil

  • 2 tsp salt

  • 1/2 tsp black pepper

Instructions

  1. Make the vinaigrette.
    Whisk all vinaigrette ingredients together in a small bowl until well combined. Set aside.

  2. Prepare the greens.
    Run a knife through the lettuce once or twice or tear the larger leaves in half.

  3. Assemble the salad.
    Mix all salad ingredients together in a large bowl, reserving some nuts and cheese for garnish. Add a pinch of salt and a drizzle of vinaigrette.

  4. Taste and adjust.
    Add more salt and dressing as needed, tasting as you go.

Chef’s Tips

  • If your red onion is especially strong, soak the slices in cold water for 15–45 minutes to mellow the flavor.

  • Make ahead: The vinaigrette can be prepared up to 3–4 days in advance and stored in the fridge.
