Cabbage Patch
Throughout history, cabbage has been touted for its many health benefits. As a cruciferous vegetable, it is loaded with vitamins C, A and K, as well as insoluble fiber - so this week you can rely on our Cabbage Patch Blend, which combines cabbage leaf with crunchy lettuce, to support your gut and keep you regular. The cabbage leaf we grow is crisp and tender, which means this mix is great raw; lightly cook it for a milder flavor. We like to add a warmed, soft cheese (think goat or feta), cranberries or pomegranate seeds, and make a bright, crunchy salad.
Spicy Microgreens
Our green and red Mizuna microgreens are incredibly nutritious and have a peppery, slightly spicy flavor. We harvest these microgreens just when the first leaves appear on the mizuna plant - it’s at this stage when the nutrients are concentrated, the mizuna flavor is mild and delicious, and the greens are tender. You can add these microgreens to any dish that needs an earthy component and know that you are adding vital vitamins and minerals to your meal. To keep them fresh for the week, rinse and dry your spicy micros and store them in the fridge.
Sage
Did you know that sage comes in over 900 different varieties? This week, you’ll enjoy organic purple and green sage, grown and harvested at your local farm. Sage has a high concentration of essential oils that collect on its soft surface, which gives not only its intense flavor and aroma, but also its ability to be studied, which it is, extensively, for medicinal properties. Rely on sage alone to add flavor (without the calories) as a meat or vegetable seasoning. We like to make herb butter and use it on…well…everything. Mirepoix
It’s a famous combo - celery, carrots and onions that, when diced and cooked in fat like butter or oil, becomes golden, creating the flavor base for many recipes. You’ll receive everything you need to make an organic, local mirepoix this week - we harvested young celery, colorful carrots and green onions. We love mirepoix because it means being equipped to build foundational flavor for so many classic recipes like soups, sauces and more, but it also allows you to be creative - you can depend on our ingredients to make a truly flavorful base and feel empowered to experiment in the kitchen. Go wild and add some sage to spice up your mirepoix this week.
