Kale Mix
This kale mix is hearty, frilly, and has a sweet, peppery flavor. Antioxidant and fiber rich kale can be crisped into crunchy snacks in the oven, used for the base of a salad or pesto, and can liven up anything that’s hot off the grill. We’ve moved the farm to your neighborhood to bring you nutritious superfood favorites like this perfectly mixed kale.
Pea Shoots
These earthy microgreens are big on taste! Pea shoots are the early vines, leaves, and stems of the pea plant. Rich in bone-fortifying vitamin K, pea shoots also have protein and fiber.
Our farming experts recommend adding these into the kale mix this week for a texturing layer. Pea shoots taste best raw, and work well added to crostinis and tomatoes with an olive oil drizzle. They complement horseradish or mustard based sauces, and stir fry perfectly in a wok or skillet.
Mirepoix (Carrots, Celery, Onions)
A farm favorite is back! Mirepoix (pronounced meer-pwah) is a traditional French recipe of diced celery, carrots, and onions. This versatile mix makes a culinary base for summer stews, nutritious broths, and gumbo. Micronutrients, digestive enhancing fiber, and vitamin C make an aromatic combo of medicinal local food.
Traditionally diced into small cubes and slowly cooked in healthy fat (butter or oil) over low to medium heat for a base, you can grill mirepoix, or use it in place of a bed of rice or add to quinoa. For more information, read our mirepoix crop guide.
Golden Oregano & Thyme
Go for the gold with golden oregano and thyme mix to make a classic Italian duo of medicinal herbs grown locally at our Arlington, VA farm. These tasteful beauties deepen the flavor profile of pastas, pestos, dips, and casseroles.
Mince leaves simply to sprinkle into any savory dish, or add to a marinade for grill or skillet-based meat dishes. We love to fold oregano into potatoes, add thyme for olive oil bases, and to flavor Italian and Mediterranean grills and mirepoix base.
These herbs help heal cuts and bruises, and are known for their anti-inflammatory and anti-microbial properties. Mix these in with soft cheeses or dips for an extra savory flavor on your charcuterie board!
Chocolate Mint
This week’s harvest includes cocktails and dessert, as chocolate mint is a perfect, mood-boosting herb for fruit, end of summer beverages, and gelato. Muddle into a chocolate mint mojito, or add to breakfast berries and yogurt. We love to add antioxidant rich, velvety chocolate mint to smoothies and granola!
