Crispy Lettuce Pancake
Inspired by Korean Yachaejeon, this pancake is quick to make and packed with fresh greens.
When mealtime feels like a chore but your cravings still demand something satisfying, this Crispy Lettuce Pancake delivers. Inspired by the Korean yachaejeon, it’s a savory vegetable pancake made with a simple batter, whatever vegetables you have on hand, and just enough oil to get everything golden and crisp. This version uses finely grated purple potato, scallions, Area 2 Farms’ Seasonal Specialty Microgreens, and a generous helping of our Grilling Greens.
Crispy Lettuce Pancake Recipe
Ingredients
Batter:
1 cup all purpose flour
2 Tbsp corn starch
1 tsp salt
1 tsp garlic powder
1 cup cold water
Neutral oil for cooking
Vegetables
2 cups Grilling Greens, chopped
1/4 cup Seasonal Specialty Microgreens
3/4 cup purple potato, finely grated
1/2 cup scallion, thinly sliced
Dipping Sauce:
2 Tbsp coconut aminos or soy sauce
2 tsp sesame oil
2 tsp rice wine vinegar
1 tsp maple syrup or honey
Optional: 1 tsp chopped chili or Sriracha
Instructions:
Whisk all dry ingredients together in a bowl.
Add cold water and whisk until combined. The batter should be thick.
Using your hands, squeeze some of the liquid out of the shredded potato.
Add all the grated and chopped veggies to the bowl of batter. Use a spatula to combine well.
Heat 1 Tbsp oil in a skillet on medium.
Add 1/4 of your pancake batter, spreading it evenly into a thin layer so it cooks evenly and crisps up. Cook for 4–5 minutes.
Once golden brown and crispy, lift with a spatula, add another 1 Tbsp oil, then flip to the other side.
Cook for another 4–5 minutes, flattening the pancake with the spatula as it cooks.
If the edges aren’t crisping, drizzle a little oil around the edges.
Top with extra microgreens and serve on its own, over crunchy Grilling Greens, or with a protein for a more complete meal.
