Greens & Grains Gratin
This grains and greens gratin is a lighter take on a classic comfort dish. Instead of relying on heavy cream and milk, it uses olive oil and balsamic vinegar for richness and depth.
It’s an easily adaptable recipe depending on what you have on hand, and a great way to make leftover grains and veggies feel special again. Choose whatever grains or greens, in whatever ratio, you’d like. For this recipe, we’re using quick cooking quinoa and Area 2 Farms’ Superfood Blend.
Ingredients
1.5 cups quinoa
5-6 cups Area 2 Farms’ Superfood Blend, roughly chopped
1/2 onion, diced (about 1/2 cup)
1 Tbsp garlic, minced (or 2 tsp garlic powder)
1/2 cup panko breakcrumbs
2 cups grated Gruyere (or cheese blend of choice)
1/4 cup parsley, chopped
1/2 cup olive oil, split
3 Tbsp balsamic vinegar
Salt & pepper
Instructions
Preheat oven to 400F.
Heat a medium sized pot over medium heat, add 2 Tbsp oil and saute onion and garlic for 4 minutes or until translucent and just starting to brown.
Add greens and garlic with a pinch of salt and saute until wilted, 2-3 minutes. Once finished, place into a large bowl.
In the same pot, cook quinoa according to package directions.
While the quinoa cooks- mix 1 cup cheese, panko, 2 Tbsp oil and a small pinch of salt together in a small bowl- making sure the panko is coated in oil.
Add quinoa to the bowl with greens and 1 cup cheese. Season with oil, balsamic, parsley and a pinch of salt and pepper and mix well. Taste and add more seasoning as needed. Feel free to add other seasonings or cooked veggies that you have on hand. Make it your own!
Coat a baking pan with oil or butter, then put your grains and greens in and sprinkle breadcrumb-cheese mixture on top.
Bake for 20-25 minutes until the cheese is melted and breadcrumbs are golden brown.
