Super Green Pasta
If you’re looking for a fast, flavor-packed way to use up your greens, this recipe is it. It’s the kind of meal that feels fancy but comes together quickly. Even better, it’s endlessly flexible. Start with the base recipe, then add seasonal veggies, burrata, or a handful of microgreens for a little extra flair.
Recipe
Ingredients:
Sunflower shoots (the whole box)
1 whole bag of Farm Crunch lettuce
6 cloves garlic
3/4 cup pistachios (or substitute pine nuts or sunflower seeds)
1 cup grated parmesan cheese (reserve a couple pinches for garnish)
2 lemons, zested and juiced
1/3 cup olive oil
1/2 teaspoon red pepper flakes
Chives, cut into small batons
Kosher salt
Pasta of choice
Instructions:
Bring a large pot of salted water to a boil.
Once boiling, add the garlic cloves and blanch for 6 minutes or until tender. Remove the garlic with a slotted spoon.
Cook your pasta to al dente according to package instructions. Reserve at least 1/2 cup of pasta water before draining.
In a blender or food processor, combine the blanched garlic, Farm Crunch, sunflower shoots, and olive oil. Blend until smooth.
Pour the sauce into a sauté pan and bring to a gentle simmer.
Stir in the parmesan, lemon zest and juice, red pepper flakes, and 1/2 cup of pasta water. Mix well.
Add the cooked pasta to the pan and toss to coat. Adjust with more salt or pasta water as needed until the sauce evenly coats the noodles.
Serve topped with the reserved parmesan and chopped chives.
Tip: Freshly grated parmesan melts better than pre-grated, so if you have the option, grate your own.
