Superfood Creamed Greens
This recipe calls for the hearty Area 2 Farms’ Superfood Blend plus extra kale. They’re all greens that hold up to heat well and, therefore, create a more substantial, flavorful side dish. You can easily scale this recipe up or down depending on your gathering size. The miso won’t stand out as a distinct flavor, but it adds a rich, savory depth (like a quiet umami bomb) that makes everything taste better.
Ingredients
1 bag Area 2 Farms’ Superfood Blend
1 bunch Lacinato or curly kale
1 ½ cups broccoli microgreens
1 leek, sliced thin
5 cloves garlic, grated or minced
4 Tbsp butter
2 Tbsp olive oil
3–4 Tbsp white miso
¼ cup white wine (or sub with broth)
1 cup heavy cream
Optional: 1 cup finely grated Parmesan or Pecorino
Instructions
Peel the kale off the stems by pinching the stem and running your hand down its length. For smaller, tender stems, thinly slice them to use. Roughly chop the Superfood Blend and kale.
Heat a large pan over medium heat and melt the butter and olive oil together.
Once melted, add the sliced leeks and sauté until translucent. (If using kale stems, add them here.)
Add the garlic and continue cooking for another 3 minutes.
Add the greens in portions as they begin to cook down, seasoning with a few pinches of salt as you go.
Once the greens are wilted and some of the liquid has cooked off, increase the heat to medium-high and pour in the white wine.
Cook until the wine’s aroma fades and all the liquid has evaporated.
Stir in the cream and miso, then simmer until the cream has reduced and coats the greens. (Add cheese here, if using.)
Season with black pepper and adjust with more salt or miso to taste.
