First Week of Spring Season 2024

Cabbage Patch 

This week’s Cabbage Patch Blend combines earthy lettuce with cabbage leaf. As a cruciferous vegetable, cabbage is loaded with Vitamin C, A, and K, as well as fiber. Our cabbage leaf is crisp and tender, so this mix is great raw; cook it for a milder flavor. 

Pea Shoots

These baby pea plants, like other shoots and microgreens, are a mighty source of micronutrients. Our organic pea shoots are sweet, a little grassy, and super crunchy which means they are great raw but can also be quickly sauteed and served warm. Try pea shoots au gratin for a more decadent side dish. To store shoots, rinse, dry and keep them in the refrigerator wrapped in a paper towel.

Kale Microgreens

Mature kale gets a lot of hype for its nutritional value, but these kale microgreens take it up a notch. Overall, microgreens are 40 times more nutrient-dense than their mature counterparts. And while they do have an earthy flavor, their youth and tenderness makes them considerably less bitter than eating full-grown kale. These micros will be a delicious and highly nutritious addition to your diet this week. 

Garlic Chives

Here is your flavor boost for the week! Garlic chives are both rich and delicate with a flavor that resembles both garlic and onion, but without the pungency. You can use these raw - chop them up and sprinkle over vegetables or meat for extra flavor and texture. Or use them as a garlic or onion substitute when cooking. You can easily chop these garlic chives and add them to softened butter or soft cheeses as well.

Snap Peas

Snap peas are bright green - perfect for the start of our spring season. We harvest them when the peas inside are small and sweet. They have an addicting crunch, which makes them great as a snack or with a dip. With a high water content, these snap peas are a great way to get mineral-rich hydration. Try throwing these in last minute when making a stir fry and they will add great crunch and flavor.
