Sixth Week of Spring Season 2024

Red Crunch Lettuce and Kale Mix

This week’s lettuce mix is made up of antioxidant-rich greens grown in nutrient-rich soil. Bright, grassy and tender kale combines with red crunchy lettuce to make an earthy blend - nutritious and flavorful. Like all of our lettuce mixes, you’ll have a perfect base for all types of salads - great for adding crunch and flavor to meals to support your digestion and easily incorporate vital nutrients into your diet.

Purple Cabbage Microgreens

This week’s purple cabbage microgreens are baby cabbage plants - both flavorful and nutritious. Like all microgreens, they will resemble the flavor of the mature plant, but be milder with a tender texture. Use these micros to add crunch to meals and get essential vitamins like C, A, and K, as well as fiber to support your digestion.

Pea Shoots

These baby pea plants, like other shoots and microgreens, are a great source of micronutrients. Our organic pea shoots are sweet, a little grassy, and super crunchy which means they are great raw but can also be quickly sautéed and served warm. Try pea shoots au Gratin for a more decadent side dish. To store shoots, rinse, dry, and keep them in the refrigerator wrapped in a paper towel.

Garlic Chives

Here is your flavor boost for the week! Garlic chives are both rich and delicate with a flavor that resembles both garlic and onion, but without the pungency. You can use these raw - chop them up and sprinkle over vegetables or meat for extra flavor and texture. Or use them as a garlic or onion substitute when cooking. You can easily chop these garlic chives and add them to softened butter or soft cheeses as well.

Onion

Our spring onions are thinner and more delicate than a typical onion without missing any of the flavor. In fact, because our onions are thin, they lack the fibrousness and bitterness of typical onion, and can be used raw or cooked. Onions, like their garlic and leek family members, are prebiotic foods, which improve the health of your gut. This week, try this simple roasted leeks recipe for a fresh, flavorful and healthy side dish.

Dill Microgreens

These dill microgreens are bright green and feathery with a fresh, slightly citrusy and herbal flavor. They will bring that brightness and freshness to your meals this week. Use them in salads or to garnish soup - it’s best to apply these nutritious microgreens raw this week, as their delicate nature won’t withstand high heat.
