How to Prepare White Bean Soup
There are two simple ways to prepare this soup—either with a pressure cooker/InstaPot or a traditional slow cooker or stovetop pot. Just remember that beans absorb a lot of water so if you want a soupier consistency then add more water, broth, or stock.
Pressure Cooker/InstaPot Method:
Add the beans and herbs, 1 quart of water, broth, or stock, and the desired amount of salt to the pressure cooker.
Cook on high pressure for 30-35 minutes.
Allow the soup to cool for 10-15 minutes before serving.
Slow Cooker or Stovetop Method:
Add the white beans and herbs to a pot or slow cooker.
Pour in 5 cups of water, broth, or stock, and add salt to taste.
Cover and cook:
Slow Cooker: On low for 8-10 hours or on high for 4-6 hours.
Stovetop: Simmer for approximately 2-3 hours, stirring occasionally.
Stir periodically and check for consistency. For a soupier texture, add more liquid as needed.
