Spring Rolls
Try these nutrient-dense spring rolls for a fresh and healthy snack or easy to-go lunch.
Ingredients:
You can easily substitute a variety of vegetables. Cucumbers, cabbage, radishes, or many lettuces can be used. Here are some of our favorite ingredients:
Spring roll papers
Area 2 Farms Asian greens, petitie mizuna medley, or wasabi arugula
Any variety of Area 2 Farms microgreens
Instructions:
1. Prepare the Ingredients:
Slice the turnips, carrots, radishes, or any other vegetables thinly.
Rinse and prepare the greens and microgreens.
2. Soak the Spring Roll Papers:
Fill a shallow dish with warm water.
Submerge one spring roll paper into the water for about 5-10 seconds until it becomes soft and pliable.
3. Assemble the Spring Rolls:
Lay the soaked spring roll paper on a clean surface.
Place a handful of greens, a few slices of turnips, and a sprinkle of microgreens in the center of the paper.
4. Roll the Spring Rolls:
Fold the bottom edge of the paper over the filling.
Fold the sides of the paper inward.
Roll tightly from the bottom to the top, sealing the edges.
5. Serve or Store:
Serve the spring rolls immediately with your favorite dipping sauce, such as peanut sauce or sweet chili sauce.
Alternatively, you can store the spring rolls in an airtight container in the refrigerator for up to a few hours. If stacking, place a piece of parchment paper between layers to prevent sticking.
