Superfood Sheet Pan Pizza
This sheet pan pizza is all about balance: a crisp, chewy crust topped with layers of greens that add flavor, texture, and nutrition. Sautéed leeks and Area 2 Farms’ Superfood Blend bring depth, while fresh herbs and sunflower shoots finish it with crunch and brightness. Adding greens to pizza is an easy, delicious way to make a comfort favorite more nutritious.
Ingredients
For the Dough
2 1/4 cup pizza maker's flour (can substitute all purpose flour)
1/2 cup warm water
3 tsp olive oil
2.5 tsp sugar
3 tsp kosher salt
3 tsp active dry yeast
For the Toppings
1 leek, sliced
3–4 cups Area 2 Farms’ Superfood Blend, roughly chopped
3 tsp Italian seasoning
Basil, removed from stems
1 jar store-bought pizza sauce
3–4 cups shredded Mozzarella (ideally low-moisture, whole milk)
2 tsp salt
2 cups sunflower shoots
Instructions
Make the Dough
Put all dough ingredients into a stand mixer with a dough hook and mix on the lowest setting for 15 minutes. Alternatively, mix all ingredients with a spatula, then knead by hand.
Place the dough in an oiled bowl and let rise in a warm place, covered with plastic wrap or a kitchen towel, for 20 minutes. If your kitchen is cold and the dough hasn’t noticeably risen, continue resting until about doubled in size.
Oil a 9×16 baking pan with about 2 Tbsp olive oil. Gently spread and flatten the dough so it covers the bottom and reaches all the corners.
Cover and let rise for another 15–20 minutes.
Tip: If you want to prepare your dough ahead of time, mix it, tightly cover, and refrigerate for 1–4 days. This allows the dough to ferment and develop more flavor. When ready to bake, bring to room temperature and continue with the rising step. Because it’s cold, plan on 45 minutes to an hour for rising.
Prepare the Toppings
While the dough rests, prepare the toppings. Cooking vegetables before baking prevents excess moisture on the crust.
Heat a pan over medium heat with 2 Tbsp olive oil. Add leeks and sauté until they begin to soften, about 3–4 minutes.
Add the chopped superfood blend and sauté another 3–4 minutes, until wilted and most of the liquid has cooked off.
Season with 2 tsp salt and Italian seasoning.
Assemble & Bake
Preheat the oven to 475°F.
Spread about 1 cup of pizza sauce over the dough, then add the supergreen mixture, and finish with cheese (feel free to go all the way to the corners).
Bake for 15–20 minutes.
Remove the pizza from the pan and cool on a rack to ensure a crispier crust.
Top with sunflower shoots and torn basil leaves, then drizzle with olive oil and a pinch of salt.
Notes
Measuring flour: Scoop flour into a measuring cup and level it off rather than scooping directly from the bag to avoid compacting.
Baking pans: Metal pans heat and cool faster, creating a crisp crust. If using glass, remove the pizza from the pan near the end and place it directly on the oven rack for the final few minutes.
