Beet the Heat Mix 

Crystal Lettuce & Beet Greens

We are the farmers who moved the farm indoors, so we know a little something about “beet”-ing the heat! Cool off and crunch down with Beet the Heat mix, a rich blend of nutrient-packed beet leaf and baby kale. This mix makes a perfect salad when accompanied with citrus and a vinaigrette, and the sweet flavor makes these easy to add into lunch sandwiches and dinner spreads.

Broccoli Microgreens

Broccoli microgreens are bright and earthy, with a distinct flavor that makes them usable in a number of seasonal recipes. And these vitamin-packed micros are up to 40 times more nutritious than the full-sized broccoli trees. Plus, they’re just one more reason to eat local! Try them on avocado toast, in a grilled cheese sandwich, or with sour cream based dips. 

Radish Microgreens 

Are you feelin’ rad? Radish microgreens are in the same Brassicaceae family as broccoli microgreens, but have a different color, flavor, and texture. Nutrients include antioxidants that keep your body protected from cellular damage. Radish microgreens are a farm favorite because of their warm flavor and hydrating feel. Sprinkle these on top of meat dishes or easily add to sandwiches or tacos. 

Dill

Our community members are just like us: kind of a big dill! Dill is one of our favorite herbs — medicinal produce that we grow right in your neighborhood at our Arlington, VA farm. Useful in salads and ranch style dips, dill is a key ingredient in pickling, cucumber based dishes, and deviled eggs. Its healing properties help clear sinuses and can aid in digestion. 

Garlic Chives

Garlic chives are packed with immunity-boosting vitamins C, A, potassium, and iron. They are irresistible in Italian dishes, perfect for pilafs, and make a beautiful aromatic experience for meat marinades or garnishes. Sprinkle on cream cheese to top a bagel!

Golden Beets

Keep on the sunny side with nutrient-packed golden beets. These crunchy root veggies are crisp when enjoyed raw, and have a soothing taste when cooked. Inflammation fighters, golden beets can be sliced into sandwiches, spiraled into veggie pasta, and shredded into dishes like salads and casseroles. These beets are the gold standard for flavor when added to vinegar-based dishes, paired with cheeses like manchego or feta. Flavor piques when citrus zests and lemon juice are added to these golden beauties, and they pair well with this week’s dill.
