10 Ways to Use Pea Shoots
Pea shoots are one of the easiest greens to use. They’re hardy enough to hold up to heat, but tender enough to eat raw, and their fresh, slightly earthy flavor works with just about anything.
You can leave them whole, but chopping them into smaller pieces makes them even easier to mix into dishes. Like other microgreens, they’re small but dense with nutrition, so it doesn’t take much to add a health boost to meals.
Once you start using pea shoots, they tend to end up in everything, and that’s kind of the point. Here are some of our favorite ways to use pea shoots:
