Spring Mix Salad Blend
This sweet, leafy salad blend is perfect for the heart of spring. Crunchy and full of vitamins C, A, K, and folate, as well as manganese and potassium.
Farmer’s recommendation: This is the classic: perfect for a salad, as a bed for a heavy entree, or as the star of a stir fry. For a spring salad, add citrus or berries, sliced almonds, and shaved cheese with a sweet, tart dressing.
Arugula Microgreens
Arug-kidding me?! These popular micros are back in the rotation! With a hydrating and flavorful crunch that hints of nuts and earth, these micros have vitamins A, C, and K, and pack a dose of iron and calcium. Pleasant and versatile, they’re are a favorite in salads and sandwiches.
Farmer’s recommendation: Sprinkle these on top of a vegetable-based dish, tofu, or any soup with a mirepoix base. Use them in a salad or as a side of their own. Minced garlic and lemon juice bring out the boldness in these micros. Try them with eggs or to top a tartine!
Radish Microgreens
Not all heroes wear capes, and these microgreens are a superfood! The little micros with the big, tangy taste, each bite has vitamins A, B5, C, K, and E, plus folate, zinc, magnesium, calcium, and iron.
Farmer’s recommendation: A sophisticated favorite, these micros add outsized flavor to salads, lunch sandwiches, or to balance heavily buttered dishes. We add them to spinach salads, or use them as a garnish for salmon and hearty meats.
Parsley
An ancient medicinal herb used for treating stomach issues and feminine cycles, parsley has iron and vitamin C. With a cooling profile, this plant has a mild but distinct flavor that completes many dishes.
Farmer’s recommendation: Parsley works well with meat dishes, in tacos, and is a necessity for Italian food. Add to salads for an unmistakable flavor. Parsley adds to ginger and garlic heavy dishes, and is a must-have for curry. We love it added to seasoned quinoa and Area 2 Farm carrots!
Carrots
You can’t go wrong with springtime carrots! Known for their vitamin A, don’t sleep on carrots’ full nutritional profile — you’ll find vitamin K, C, potassium, and fiber. Crunch on these for a pick-me-up, or use the tops in a sauce or pesto.
Farmer’s recommendation: Bite into flavor with these crunchy root vegetables. Shave into a salad, burrito, or serve as a side with red meat. You can blanch them into a stir fry or vegetable grill to add some much needed sweetness. We like to juice them with cayenne pepper, ginger root, lime or lemon, and apple. Use the greens in a salad or dipping sauce!
Chamomile
We love that mellow yellow! Chamomile are pretty white flowers with a yellow center, known for their ability to chill you out. But don’t sleep on these baby beauties — chamomile can be invigorating when used and infused at the right time.
Farmer’s recommendation: A medicinal plant used for anxiety and gastro troubles, chamomile is perfect in classic form as a hot tea. Infuse it into iced black tea with ginger and lemon to pick you up midday! Add to a microgreens salad to add a honeyed taste, or adorn cocktails and entrees where you’d normally use rosemary or lavender.
