Eighth Week of Spring Season 2024

Un-beet-leafable Lettuce Blend

(beet greens, spinach, and lettuce)

This  greens blend has a refreshing, cooling crunch. The beet greens (those leafy greens that you find atop beet roots) are a bit sweet and earthy. They are combined with spinach and lettuce making this mix vitamin C- and A- rich, and a source of phytonutrients, folate, and fiber. Use these greens to make fresh salads, add them in the final minutes when sautéing vegetables; or use them as a crispy bed for grains or meat dishes.

Kohlrabi Microgreens

Kohlrabi microgreens are slightly sweet with a flavor reminiscent of turnips or cabbage. They hold an array of vitamins, nutrients, and antioxidants, and can easily be incorporated into pasta dishes, veggie bowls, or on top of avocado toast. You can treat them as you would other leafy greens and slightly cook them to make delicious side dishes. We grow our microgreens (and all of our produce) in nutrient-rich soil, reusing plant waste to continue the natural decomposition cycle to enhance the soil health and grow healthy plants.

Rosemary + Thyme

An aromatic and flavor-building herb combo, rosemary and thyme will heighten your breakfasts, lunches, and dinners this week. Both herbs belong to the mint family, and pair well together to season meats and veggies, to fold into soft cheeses, or to infuse oil. Using fresh herbs not only offers many health benefits, but also adds so much flavor to dishes making it easy to avoid less healthy seasoning techniques. 

Onions

Rich in fiber, vitamins, and minerals, onions are the best for adding flavor to all types of dishes. You can slice them thin and use them raw in salads, grill them as an easy and delicious side, or - this week - use them with your rosemary and thyme to make a delicious Mother’s Day quiche. 

Edible Flower Mix

(viola, pansy, purple shamrock)

This special mix will delight your senses and can make a Mother’s Day meal extra special. These edible flowers are beautiful and fun to play with in the kitchen. You can easily add them to salads or as a garnish to savory dishes and desserts. Try making flower ice cubes; they are a simple way to add beauty and nutrition to your water, mocktails, and cocktails - just add edible flowers to your ice trays.
